JUNIOR'S RECIPES

Meet Tom Jr.

When you shop at ACR, you're likely to see him here (usually without a chef's hat on), because he and his parents Tom & Dawn are the owners. Junior also likes to cook, and the food liquidations business has inspired him to create some recipes. He'd like to share them with you, below.

Jr's Spicy Rice

WHAT YOU WILL NEED:

1/4 c. soy sauce
1/4 c. brown sugar
2 tsp. sesame oil
1/4 tsp. black pepper
1/2 tsp. crushed red pepper
1 T. olive oil
4 garlic cloves, minced
1 T. ginger paste, or grated fresh ginger
1 lb. ground beef
5-6 green onions, chopped
2 c. cooked white rice

INSTRUCTIONS

Make the sauce: In a small bowl combine the soy sauce, brown sugar, sesame oil, black pepper and crushed red pepper. Whisk and set aside.

Heat olive oil in a 3-qt pan over medium heat. Add garlic and cook just until fragrant, about 1 min. Add ginger and ground beef. Cook until beef is cooked through and no longer pink. Drain grease if desired, or keep in the pan for more flavor! Add green onions and cook until bright green. 

Add sauce and continue cooking over medium heat 2-3 minutes, stirring occasionally. 

Add to cooked rice and enjoy!

Jr's Irish Spaghetti

Inspired by TOMATO JUICE & VERMICELLI found at ACR

WHAT YOU WILL NEED:

1/2 lb. uncooked bacon, cut into 1/2" pieces
2 lb. ground beef
4-6 celery stalks, chopped
1 medium yellow or white onion, diced
(1) 46-oz can tomato juice
1 lb. vermicelli noodles, cooked (or thin spaghetti)
Crushed red pepper for garnish, optional

Based on a family recipe dating back from the late 1800s. Junior spiced it up.

INSTRUCTIONS

In a 3-qt saucepan, brown the bacon over medium heat. Add ground beef and brown over medium heat for about 20 minutes. Add chopped celery and cook for 10 minutes. Add diced onions and cook for 10 minutes more. Add tomato juice and cook another 10-15 minutes.

Pour over cooked vermicelli noodles. Dig in and make a mess! Enjoy!
